Who cooks
Yerly
Yerly is Venezuelan and she cooks paella in Katy. She doesn't run a long menu: she makes two, the Valenciana and the Marinera, and she makes them to order.
She works out of a permitted commercial kitchen. She buys the seafood the day of the order, not before, and she watches the rice until it reaches its point — the part that can't be rushed.
The same for Sunday lunch as for a party with a full house: the same kitchen and the same hands.

How far in advance do I need to order?
The tray of 4 servings often goes out the same day: write to us early and Yerly will tell you right away whether she has the time. An event pan is a different thing — the seafood has to be bought and the quantity coordinated, so we quote your date and book it.
Where do you deliver?
Katy, TX and the surrounding areas. If you're farther out we can still do it, with an additional delivery charge depending on the distance — we'll tell you the exact amount when we quote you.
How much does it cost?
The tray of 4 servings starts at $70. Beyond that it depends on the size and the ingredients you choose. Write to us on WhatsApp with the date and how many people and you'll get a closed price with no surprises.
How do I pay?
By Zelle, in full and in advance. The order is scheduled once the payment is confirmed. Every paella is cooked for your order and never served from anything made beforehand, so Yerly doesn't start buying or cooking until the order is paid — and for that same reason, there are no refunds once the payment goes through.
Does the paella arrive reheated?
Never. Each pan is cooked for your order and for your hour — it isn't made in advance and warmed up. That's why we ask what time you want to eat.
Do you use real saffron?
Yes — real saffron, Spanish smoked paprika and turmeric. No yellow food coloring. It costs more and it's the difference you taste.
I'm allergic to shellfish. Can I still order?
Both paellas contain shellfish and molluscs, and are cooked in the same pan, so we can't guarantee a preparation free of them. Tell us about any restriction when you order and Yerly will tell you honestly what she can and can't do.
